Do some manuals about the new plugins exist? I know there is a guide about Fabrik, but does furher material with examples for every plugins use exist?

You can check the Fabrik Wiki for more info on the plugins, although I don't think there is a complete explanation for all of them. Best way is to try the ones that inspire you. Sometimes, reading the language file is helpful.
